The traceability system makes it possible to ensure the safety and quality of perishable food products as they pass through a continuous refrigeration chain by identifying and timely eliminating failures in the process of its operation. Temperature conditions are the main controlled parameters of such products on the way to the consumer. The article formulates the criteria for ensuring their traceability when passing through the chain and signs that characterize the effectiveness of tracking, as well as recommendations for reducing the costs of creating a traceability system.
